Another Update

*We met with neurology at Children's Hospital a week ago to discuss all the results from Siahna's labwork and MRI. It was a positive meeting and they are pleased with her progress. We will go back in 3 months and reevaluate where she's at. They did suggest making an appt. with Genetics to get some genetic testing done so that will happen in January.

*Siahna clapped for the first time last night and brought us both to tears! We take nothing for granted and celebrate each step no matter how big or small. I often think of how her middle name (Grace) is so appropriate for her. It has only been by God's grace that we have gotten through the last 15 months. His grace is enough and how amazing it is!

*Case is enjoying preschool 2x a week at the rec center and has made some friends that he enjoys playing super heroes with.

*I am running my second 1/2 marathon in two weeks. Yikes! Maybe I should start running! I guess I'll just rely on adrenaline to get me through 13.1 miles. That's basically what I did last time and then I couldn't walk afterwards. I really thought mom and dad were going to have to carry me to the car. :)

*Jeff has been attending different karate classes at the rec center this past month trying to find one that he likes. He is also celebrating his 27th birthday this next week and we are having some friends over for dinner and dessert.

I guess that's all that I can think of for now.

I Win!

I have developed a reputation in our Wednesday night supper group as the "dessert lady." First there was the snicker salad that everyone loved and couldn't stop talking about. Then, I made a strawberry cheesecake trifle that was delish. It's a hard reputation to live up to because even though I enjoy cooking I don't do a lot of it because my little ones consume a lot of my time.

Well, one of the guys in the group was having a birthday and had a challenge. Bring your best cobbler and the winner gets a $100 gift card to a steakhouse in Boulder. You know me, that steakhouse gift card was a must have! (not!). However, I do try to allow my husband to have a steak every once in awhile so decided to accept the challenge. I got online to find a cobbler recipe. I've never made a cobbler before but always think of fruit when I hear the word cobbler. So, I decided to go outside the norm and look for a cobbler that didn't have fruit in it. Thank you, Paula Deen. Chocolate Pecan Cobbler full of butter and whipping cream. After spending $20 on ingredients I decided it really wasn't worth a $100 GC after driving all the way to Boulder. Jeff even said that if I didn't have time to make it, we'd just return the ingredients.

It's a simple recipe and quick to make so I got it done. We took it and put it on the table with nine other cobblers (all fruit). The birthday boy went around taking a bite of each one and making notes. He then decides he has a winner and proceeds to tell us how apple cobbler is his absolute favorite....however, something else has struck his fancy and he can't get over the chocolate cobbler. Therefore, I was declared the winner and have a $100 GC to a steakhouse coming in the mail!

It's a hard reputation keeping up with, but someone has to do it!

Camera Happy

Yesterday, we got a little crazy with the camera. I realized that we had lots of pictures of the kids, but Jeff and I are in very few of those pictures. I don't want our kids to always wonder what their parents looked like when they were growing up!
Needless to say, the hair bow was pulled apart by the time we left the house for lunch.
This one is probably my favorite. Siahna often looks up at us like that when we're holding her. It's so sweet!

Perfect Basil Sauce

I don't normally eat hamburgers, but when I saw this recipe on Ten Dollar Dinners with Melissa d'Arabian, I knew I had to try them. We love basil and bought a basil plant this summer to supply our basil needs. Well, actually, I tried growing my own basil but my niece ran over my plant with Case's 4-wheeler and now it is growing wild in our flower bed!

Anyway, make hamburgers like you normal would and then use this basil sauce on top. Delish!

Perfect Basil Sauce
  • Total Time: 5 min
  • Prep: 5 min
  • Yield: 4 servings
  • Level: Easy

  • Ingredients
    • 1 green onion, chopped
    • 3 tablespoons roughly chopped fresh basil
    • 1 large clove garlic, minced
    • 1/2 cup prepared mayonnaise (I would actually use a little less than 1/2 a cup)
    • 3 tablespoons sour cream
    • 1/2 teaspoon Worcestershire sauce
    • Kosher salt and freshly ground black pepper

    Directions

    Blend the green onion, basil, garlic, mayonnaise, sour cream, and Worcestershire sauce in a blender until creamy and pale green. Taste the sauce and season with salt and pepper, if needed.
