Sunday nights are Jeff's night to cook. Tonight, we had a fantastic dinner and I thought I'd share it.
Cajun Shrimp & Rice
1 pkg (8.8oz) ready-to-serve long grain rice
1 lb. uncooked medium shrimp, peeled & deveined (we used cooked shrimp)
2 t. Cajun seasoning
1 T. olive oil
1 T. butter
1.5 t. minced garlic
1 pkg (6oz) frozen snow peas, thawed (we used Sugar Snap Peas b/c I couldn't find frozen snow peas)
Cook rice according to package directions. Meanwhile, in a large skillet, saute shrimp and Cajun seasoning in oil and butter until shrimp turn pink. Add garlic; cook 1 minute longer. Add peas and rice. Cook 2-3 minutes or until heated through.
Easy Cheese Garlic Biscuits
2 C. bisquick
2/3 C. milk
1/2 C. shredded cheddar cheese
1/4 C. butter, melted
1/4 t. garlic powder
Heat oven to 450. Stir bisquick, milk and cheese until soft dough forms. Drop dough by spoonfuls onto ungreased cookie sheet. Bake 8-10 minutes or until golden brown. Mix butter and garlic powder; brush on warm biscuits before removing from cookie sheet.
